This is the Distiller's Safe expression from Jameson's Whiskey Makers Series, which celebrates the hard work of their Head Cooper, Head Blender and Head Distiller - this one honours the latter, Head (/Master) Distiller Brian Nation! Matured in ex-bourbon casks, the character of the spirit is allowed to shine through after around 5-6 years. Part of the 2016 Whiskey Makers Series, the Distiller's Safe is Head Distiller Brian Nation's bottling that highlights his influence on the quality of the new make spirit without excessive wood influence. While the barrel is often thought of as the primary contributor to a whiskey's overall flavor, the influence of the new-make (called "cleric" across the pond) can have a profound impact as well. The cleric is a product of the type of grains used, of the shape of the still, of the length of fermentation and distillation, of the size of the cut, of the type of condenser, and of many other factors that the master distiller can use to achieve his or her desired style. The distiller's safe, a small clear box where the distillate emerges from the final still, is the physical place where all of the distiller's work coalesces: the point where the final cut is made before entrusting the remainder of the process to the cask. About the brand

Contrary to its origins in 1780 Ireland, Jameson Whiskey was actually founded by Scottish-born lawyer John Jameson. The brand began as part of 6 main whiskeys produced and distilled at the Jameson Distillery located in Bow Street, Dublin Ireland. However, production of this iconic whiskey was taken over around 1966 by Irish Distillers, a subsidiary of French aperitif manufacturer Pernod Ricard; owner of renowned brands such as Chivas Regal and Absolut Vodka. Originally available by the cask only, it wasn’t until 1968 that this superior whiskey could be purchased by the bottle. Since that time, Jameson Whiskey has expanded the brand and is now sold in over 130 countries worldwide. This distinct Irish whiskey uses a unique triple-distillation process along with expertly sourced oak barrels from England, Spain, and the US in the creation and aging of all of its whiskies.

Tasting Notes

Nose

Floral sweetness, nutty and slightly herbal, fresh vanilla. Some toasty spices and and nice but of liquorice.

Taste

Ripe fruit notes develop on the palate. Mandarin, melon, citrus. Some spicy clove and nuttiness in tow.

Finish

Sugared almond, apricot and orange peel.
