In a trick process known as "marriage", each eau-de-vie is aged in a separate barrel. When they are eventually brought together in a large Limousin cask, the blend is brought to 40% ABV through the slow addition of very old, weak Grande Champagne eaux-de-vie of around 15%, known as "vieilles fables". A difficult process that requires skill and patience, lowering the alcohol content of the blend without compromising on flavor.
